Cherry Ricotta Mousse

The name of the above grabbed me immediately when I saw it on Journey of an Italian Cook.  http://journeyofanitaliancook.blogspot.com/2011/03/bowled-over-by-ricotta-mousse-and.html

It has been about a week since I have been able to link properly on Word Press which makes me think, it is time to leave and go over to Blogger or another group.  I apologize to all of you and wish I could do something about it.  Is anyone else having this difficulty on Word Press?

Cherry Ricotta Mousse(adapted from Tastes of Italia)

16 ounces whole milk ricotta (commercial brand works best in this recipe)
1/3 cup powdered sugar
1/2 cup toasted slivered almonds
1/2 cup whipping cream
1 teaspoon vanilla
1/2 cup cherry jam
1/4 cup dark chocolate chips
Method:
  1. Using a small, dry skillet, lightly toast your almonds. (I forgot to do this but I did use the almonds, untoasted)
  2. In a large bowl beat the ricotta and powdered sugar till combined.
  3. In a medium bowl, whip your cream with the vanilla until soft peaks form.
  4. Fold cream into the ricotta mixture.
  5. Fold in your almonds and cherry jam
  6. In a small pan or a microwaveable bowl, melt your chocolate.
  7. Spoon ricotta mixture ramekins.
  8. Drizzle with chocolate and serve. Or – cover with plastic wrap and store for 24 hours.

  1. These look amazing! I have not used ricotta for sweet treats but I hear it’s amazing.

    I use WordPress and have not had any problems linking. Have you tried linking in the HTML mode using actual HTML coding? That should work. Feel free to email me if you have any questions :)

  2. I had problems with WordPress at one time. I couldn’t sign on properly and I couldn’t see any of the blogs properly. I don’t know what was going on. So my good friend told me maybe it’s my browser even though we knew it probably wasn’t. So I downloaded Firefox and amazingly that worked. I use Firefox instead of IE for WordPress now. I don’t know if IE and WordPress was having a fight but I got out of it quickly. Not sure if that will help you but it helped me. And this cherry ricotta mousse looks delicious btw :)
