Orange Raisin Cookies – Taste of Home

I am in the midst of a cookie baking blitz with a deadline so I am looking for easy but yummy cookie recipes. The first one, I have made is the Orange Raisin Cookies, called Orange Drop Cookies by Taste of Home. I rushed through these, this morning and I ended up with three containers filled with cookies. I followed this recipe but added about 3/4 cup of golden raisins and used margarine instead of butter.
Orange Raisin Cookies
Ingredients:
- 1 cup margarine, softened
- 2 cups sugar
- 3 eggs
- 1/3 cup orange juice
- 1 tablespoon grated orange peel
- 4 cups gluten-free flour
- 2 teaspoons baking powder

- 1 teaspoon baking soda
- 3/4 cup golden raisins
Method:
- In a bowl, cream butter and sugar.
- Beat in eggs, orange juice and peel.
- Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well.
- Add raisins.

- Drop by teaspoonfuls 2 in. apart onto greased baking sheets. (I used a teaspoon cookie scoop to make these.)
- Bake at 350° for 12-14 minutes or until edges begin to brown. (Twelve minutes worked for me.)
- Remove to wire racks to cool. Yield: about 8 dozen.
