Orange Raisin Cookies – Taste of Home

I am in the midst of a cookie baking blitz with a deadline so I am looking for easy but yummy cookie recipes.  The first one, I have made is the Orange Raisin Cookies, called Orange Drop Cookies by Taste of Home.  I rushed through these, this morning and I ended up with three containers filled with cookies.  I followed this recipe but added about 3/4 cup of golden raisins and used margarine instead of butter.

Orange Raisin Cookies

Ingredients:

  • 1 cup margarine, softened
  • 2 cups sugar
  • 3 eggs
  • 1/3 cup orange juice
  • 1 tablespoon grated orange peel
  • 4 cups gluten-free flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 cup golden raisins

Method:

  • In a bowl, cream butter and sugar.
  • Beat in eggs, orange juice and peel.
  • Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well.
  • Add raisins.
  • Drop by teaspoonfuls 2 in. apart onto greased baking sheets. (I used a teaspoon cookie scoop to make these.)
  • Bake at 350° for 12-14 minutes or until edges begin to brown.   (Twelve minutes worked for me.)
  •  Remove to wire racks to cool. Yield: about 8 dozen.
