Potato Sausage Dish Transformed by Mustard and Vinegar

This is an opinion.  I ate this dish and the little bit of Dijon mustard present, dominated in a subtle way, every mouthful.  I loved it and I am not a big fan of mustard.  I can take it or leave it, depending what it is in.  Here, it seemed to me magical.  Mixed with the vinegar, it added a nice tang that I though changed the whole composition of the dish.

I had a bag of about 8 little red potatoes sitting, ignored, for too long.  As I often do, that one ingredient dictated dinner.  Now, what to serve with it?  In the freezer, were two lonely sausages, who just had to join in the fun.  Now, I had potatoes and sausage so I thought cabbage.  Problem was that there was no cabbage, in the house and I was really trying not to go to the store.

I kept looking and saw that I had onions.  That sounded right.  Oh, an opened carton of organic vegetable broth.  Had to use that up.  Perfect.

Potato Sausage Casserole

Ingredients:

8 small red potatoes

2 turkey sausage and 2 chicken hot dogs

1 large onion, cut up

1/2 bell pepper cut in half inch pieces

2 tablespoons olive oil

1 1/2 – 1 cups organic vegetable broth

1 tablespoon Dijon mustard

1 teaspoon apple or rice vinegar

1 tablespoon dried parsley

1 tablespoon fresh chives, chopped

salt and pepper to taste

 

Method:

Microwave potatoes until cooked, not soft. 

In a large skillet, saute sausage  in olive oil until both sides are  browned.

Add vegetable broth.

Continue cooking for another five minutes. 

Add  the mustard, chives, parsley, vinegar, salt and pepper.   Continue cooking for about three minutes.

While the sausages are cooking, in another skillet brown potatoes, bell pepper and onions.  Put onions and bell pepper in first for 3 minutes and then add cooked potatoes.

Add onions. bell peppers and potatoes to sausage and liquid.  The liquid evaporated quickly.  I found, I had to add more, as I went along.  I started with only one cup, though.  If you find, you have a lot of liquid left, cook it down or save it for another dish.
