Sloppy Joes CEiMB

This is my week to pick the recipe for CEiMB. I have been a member for quite a while, months at the least.  As a result, I have made healthier and tastier food, over this time.  The other members are a supportive group who are always there with words of praise or help.  If you are interested in joining us, stop over at Craving Ellie (Krieger) in My Belly and let Marthe know.

Actually, I selected it, about a month ago.  I was hoping the weather would be cooler so  we could really appreciate this.  I had three choices that I wanted to suggest.  Sloppy Joes is an old favorite that I have not made in a while.  It was funny when my husband asked me if Sloppy Joes usually had beans in it.  Tonight, it did, but the way, I used to make it did not.  I explained, this is for Ellie.  We do it her way.

I stuck to this recipe closely but I did eliminate the garlic and jalapeno peppers.  If, I included them, the entire casserole would  be for me.  I don’t need hubby getting sick from the hot stuff.  Otherwise,  I believe, I followed the recipe, as is.

As is normal for Ellie’s recipes, it went together, with ease and it did not take much time to get it, in the pan.  Being Ellie, she made sure, we got rid of the grease from the meat.  It is a pleasure cooking her recipes.

  • 8 servings      

Ingredients:

  • 1 pound extra-lean ground beef
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeno, minced
  • 1 red pepper, diced
  • 1 can small red beans or pinto beans, preferably low sodium drained and rinsed
  • 1 1/2 cups no-salt-added tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon red wine vinegar
  • 1 tablespoon molasses
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 3/4 teaspoon salt
  • Freshly ground black pepper
  • 8 whole-wheat burger buns

Method:

Brown the meat and the onion in a large nonstick skillet over medium-high heat for 5 minutes, breaking up the meat into crumbles as it cooks. Pour the drippings out of the pan and discard. Add the garlic, jalapeno, and red pepper and cook 5 minutes more, stirring occasionally. Stir in the rest of the ingredients, reduce heat to low, and simmer for 5 minutes more. Place a half-cup scoop of the mixture onto each bun and serve.

This was a chunky sloppy Joe that had lots of taste even without the garlic and jalapeno pepper.

  2. I LOVE Sloppy Joes, and I just developed an allergy to the stuff in the can (the only stuff I would eat from a can – dates back to forever lol). I also love that it’s low fat. A definite must try for me, looks fantastic!

  6. vert similiar to the way my mother makes hers I should start making it this way but normally I have cans ready to go because it saves time but it is not as good as the way you and my mother cook it

  11. What a great choice, Chaya! These were one of my absolute favorites as a kid and I haven’t had them in forever! I love how healthy this recipe is, I’m going to have to try it!

  15. I agree, I had my doubts whether we would all pass out from heat stroke eating sloppy joes in the summer but they were perfect. I had to eliminate the pepper for my parents sake and I eliminated the ground beef for my sake. The recipe was terrific.
    I would make this again and again (air conditioning cranked).
