Balsamic Roasted Red Potatoes

My husband left a note, for me, this morning, asking if we could have potatoes as part of our dinner.  He, so frequently requests anything, I was thankful for the guidance.  I always imagine, he is eating food, he is indifferent to because he does not tell me, what he wants. 

This simply, sounds good, so I made it.  Often, I think, add balsamic vinegar to anything, and it will be delicious. 

 

  

Balsamic Roasted Red Potatoes  -  adapted                                

 

Ingredients:

  

2 tablespoons olive

2 pounds small red potatoes, sliced 1/2 inch thick

1 tablespoon finely chopped green onion

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/8 teaspoon ground nutmeg

1/4 cup balsamic vinegar

1/4 teaspoon salt

1/4 teaspoon pepper

Method:

  

1.

In a large nonstick skillet, heat oil over medium-high heat. Add the potatoes, onion ; toss to combine. Add the thyme, rosemary and nutmeg; toss well. Cook and stir for 2-3 minutes or until potatoes are hot.

2.

Transfer to a  baking pan coated with nonstick cooking spray. Bake at 400 degrees F for 25-30 minutes or until potatoes are golden and almost tender. Add the vinegar, salt and pepper; toss well. Bake 5-8 minutes longer or until potatoes are tender.

 

These came out beautifully golden brown.  Have not tasted yet.

  1. I haven’t even owned balsamic vinegar for a long time. I used to make a reduction to put on pizza, but sometimes my mind and time slip away. But what could be better than the sweet/tart of balsamic and creamy dreamy taters! I’m sooo there! Thank you for bringing potatoes to Two for Tuesdays! They’re one of my favorite foods.

  6. You’re totally right about balsamic vinegar making everything delicious, this sounds wonderful! In the fall I usually do something similar with root vegetables and they taste fabulous.
