My Personal Comfort Food
I can’t remember, if I had this as a child, or if it is something I made, as an adult. What I do know, this is my go to comfort food. 
Both eggs and potatoes are comfort foods by themselves so mixing them together can only make them perfect for me.
Potatoes and Eggs
2 small potatoes or one large
2 eggs or Egg Beaters
1 onion, chopped
cooking oil
salt to taste
Although, eventually each of these is fried, I like the potato boiled first. It does not have to be boiled first but as MY comfort food, I don’t want it really fried fully.
Spray a medium skillet with cooking oil and partially fry the onion and cooked potato. In this case, the onion is only translucent, not brown. The potato fries up quickly and stay soft.
Pour beaten eggs over the vegetables and cook until the wet look is gone. Mix gently and cook for another minute. It is not scrambled, nor is it an omelet. Add salt to the cooking eggs.

Hubby and I have this quite often. We add different things to it…cheese, peppers, onions…bacon or ham..
Most of the time, we have it for dinner…Um Um GOOD!!
I make breakfast for dinner at least twice a month. This is something my mom did and now I do it for my family. Comfort food is GREAT!!! anytime of day.

That sounds like a yummy breakfast or brunch dish. I’d add in a little cheese, but that’s just me. I’m kind of addicted to cheese.

In fact, I had fried potatoes and sausage and onion for breakfast this morning – didn’t have time to add eggs.
A woman after my own stomach! Right now eggs and potatoes are the only two foods that don’t sound absolutely revolting to my poor upset tummy!
