Unstuffed Cabbage Soup

t is always a treat to visit Kevin at Closet Cooking.  He has fabulous recipes and today, I came away with our dinner, which hubby loved.  Thanks, Kevin.  You should check out Kevin’s recipe since I had to make a major change.  He used sauerkraut but I did not have any so I substituted green cabbage or is it white cabbage?                                                      FOODIE FRIDAY Click for details

Unstuffed Cabbage  Soup  (makes 4-6 servings)  (adapted) 

Ingredients:
1 pound ground beef
1 tablespoon oil
1 onion (diced)
1/2 cup California brown basmati rice
3-4 cups vegetable broth
1 (16 ounce) can diced tomatoes
2 – 3 cups cabbage
2 teaspoons sweet paprika
salt and pepper
1/4 cup parsley
1 teaspoon brown sugar
Method:
1. Brown the ground beef and set aside draining the grease from the pan.
2. Heat the oil in the pan.
3. Add the onions and saute until tender, about 5-7 minutes.
4.  Add the rice and toast for a few minutes.
5. Add the broth and deglaze the pan.
6. Add the beef, tomatoes, cabbage, paprika, , salt and pepper and bring to a boil.
8. Reduce the heat and simmer until the rice is cooked, about 20 minutes (50 minutes for brown rice).
9. Remove from heat and stir in the parsley  ( I put the parsley on after the photos.  Forgot it.)
My husband gave high praise to this.  He is the kind that usually says, “It’s good.”  His father used to say, “Not bad.”  The generations improve.  This  time, he could not stop complimenting the dish and the cook.  I won’t say which one, I am.

I planned to use chopped chicken instead of beef but that did not work out.  Other than that, this is basically a vegetable soup.  I chose brown rice because it too has more benefits than white rice and in truth, we almost never use anything other than brown rice.

  3. Cabbage rolls are way too much work. This is a perfect way to get the flavor without the labor! I would be interested in trying the sauerkraut version.

  5. I love stuffed cabbages! But they are very time consuming and I have to find a large enough cabbage, so this recipe looks very, very delicious and far more easy. This is a winner in my book. Thanks.

  11. My ex mother in law used to make the best cabbage soup. I loved it. But then I love cabbage. It was a Polish version and so good.
    Your looks fantastic and now I am dying for some.
