Unstuffed Cabbage Soup
t is always a treat to visit Kevin at Closet Cooking. He has fabulous recipes and today, I came away with our dinner, which hubby loved. Thanks, Kevin. You should check out Kevin’s recipe since I had to make a major change. He used sauerkraut but I did not have any so I substituted green cabbage or is it white cabbage?

Unstuffed Cabbage Soup (makes 4-6 servings) (adapted) 
1 tablespoon oil
1 onion (diced)
1/2 cup California brown basmati rice
3-4 cups vegetable broth
1 (16 ounce) can diced tomatoes
2 – 3 cups cabbage
salt and pepper
1/4 cup parsley
2. Heat the oil in the pan.
3. Add the onions and saute until tender, about 5-7 minutes.
4. Add the rice and toast for a few minutes.
5. Add the broth and deglaze the pan.
6. Add the beef, tomatoes, cabbage, paprika, , salt and pepper and bring to a boil.
8. Reduce the heat and simmer until the rice is cooked, about 20 minutes (50 minutes for brown rice).
9. Remove from heat and stir in the parsley ( I put the parsley on after the photos. Forgot it.)

I planned to use chopped chicken instead of beef but that did not work out. Other than that, this is basically a vegetable soup. I chose brown rice because it too has more benefits than white rice and in truth, we almost never use anything other than brown rice.
