Red Potato Salad — My Girl Paula

It is time for My Girl Paula, once again, and with gratitude to Michelle, our cheerful organizer, I want to send this red potato salad.  Our topic is healthful salads.  Normally, I would not say potato salads are particularly healthy if they have mayonnaise but this recipe calls for the slightest bit of mayo.  This was an OK salad.  I think that I would like it better with some other spice. I would make it again but would play with the spices and see what I could do. Red Potato Salad 

Ingredients:8 servings  6 cups cubed red potatoes 1/2 cup chopped green bell pepper )

1/4 cup minced red onion

1/4 cup extra-virgin olive oil

1/8 cup red wine vinegar

1 tablespoons Dijon mustard

1 tablespoons mayonnaise

1/2 teaspoons salt

  • 1/4 teaspoon ground black pepper

Directions

Cook potatoes, covered in boiling water, 10 minutes, or until tender; drain well and cool. In a large bowl, combine potatoes, bell pepper and onion.  

 In a small bowl, whisk together remaining ingredients. Pour over potato mixture, tossing gently to coat. 

Cover and refrigerate.

Unfortunately, the mayonnaise makes the salad as much as the potatoes, I think! Definitely a portion-control food for me. Thanks for the recipe — may have to find out what spices, like you said, could savvy it up some!
