Creamy and Crispy New Potato Pie – TFF (Tyler Florence)
I wanted to make something good for dinner, tonight. I had planned to make tacos and I found this potato pie by Tyler which I thought would go along with the tacos, beautifully and I admit it, I wanted potatoes. I love potatoes. A real comfort food……..
This is my submission for Tyler Florence Friday of which I am a proud and happy member.
Crispy and Creamy New Potato Pie Recipe courtesy Tyler Florence
- Serves: 4 to 6 servings
Ingredients
- 2 pounds potatoes, washed and halved
- 1 bay leaf
- 1 tablespoon freshly grated horseradish (or prepared)
- 1 cup sour cream
- 1/4 cup chives, chopped
- Kosher salt and freshly ground black pepper
- 1 tablespoon olive oil
Directions
Preheat oven to 400 degrees F.
Wash and boil potatoes in salty water with bay leaf until fork tender. (approximately 20 minutes)

Drain potatoes and mash along with horseradish, sour cream, and chives. Season with salt and pepper.

Put mixture into a 10-inch skillet with 1 tablespoon olive oil and bake until golden and crispy. To serve, invert onto a plate and cut into pieces.
I also sprinkled paprika over the top of the potato pie and added some parsley. I baked it, in a cast iron pan and to my dismay, some of it stuck to the bottom. Regardless, this was good. One of the beauties of cast iron is that little sticks to it. I usually spray it which I did this time, as well. This is one of those minor mishaps and it did not affect the potato pie at all. This is another, “three cheers” for Tyler.
