Salmon Loaf

Salmon Loaf
Ingredients:
- 1 can (16 ounces) salmon
- 2 eggs, beaten
- 1 1/2 tablespoons chopped parsley
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon pepper
- 2 cups bread crumbs or matzah meal
- 1/2 cup finely chopped celery
- 1 small onion, chopped

Method:
Pour salmon and liquid into blender or food processor. Blend until salmon is like a paste.

Chop vegetables.

Add parsley, lemon juice, salt, pepper, celery, onion, and oil to the blender bowl. This should be done until just mixed. If you are using a food processor, use a bowl instead. The goal is not to liquefy the vegetables, just to mix them in.

Place mixture in a well greased loaf pan.

Bake at 350 degrees for 45 minutes.
Eat with a salad or some simply prepared vegetables.
