Dinner

Time to make dinner……off to the fridge I go to see what is lurking, in the shadows.  There is just too much food in here.  A little cheesecake, some chili, home made tomato sauce, fresh veggies, squash casserole…..

No, all of them would not blend into a good dinner but some of them certainly would and did. 

Dinner

1 green pepper, chopped

1 cup mushrooms, sliced roughly

1/2 large onion, chopped

1 medium size zucchini, sliced and sliced again

an eggplant that got returned to the fridge – for another night

a container of chili sauce from Paula Deen’s soup (about a cup and a half) (meat sauce) —- this has been spiced

a cup of homemade tomato sauce

a cup of chopped beef

1 tablespoon olive oil

a cup of blueberries – no that’s for the muffins

opened box of pasta – 8 ounces left – gluten free

salt and pepper to taste

Put up water for the pasta. in a medium saucepan.

Heat oil in a medium to large skillet.

Add onions and mushrooms and cook until onions are translucent and mushrooms have shrunk.

Add green pepper followed by zucchini.  Cook until zucchini is almost tender or to your taste.

Time for pasta to go into boiling water.  Follow directions on box.

Add meat and chili sauce and home made tomato sauce to vegetables.  Mix together until well blended.

Heat thoroughly.

Drain pasta and rinse. 

In each plate, mound pasta and cover with the meat and vegetable sauce.

Beats meatballs and spaghetti any day.
