Sweet Melissa’s Hot Fudge Sauce

I am about to join Sweet Melissa Sundays.  While waiting, I have been trying a few of the recipes that the group has made already.

Today, I made this hot fudge sauce and I have to share the recipe.  It was delicious.  I put it on some mint chocolate chip ice cream which I did not make.  The question now is, “How do I eat dinner?”

 Hot Fudge Sauce

15 ounces best-quality bittersweet (64-68 percent) chocolate, coarsely chopped

1/2 cup sugar

1 cup plus 1 teaspoon light corn syrup

1 1/2 cups unsweetened Dutch-process powder

1 1/2 teaspoons instant coffee or instant espresso powder

2 tablespoons cognac or brandy

In the top of a double boiler over simmering, not boiling water, melt the chocolate, stirring occasionally.  Keep warm.

In a large non-reactive saucepan over medium heat, combine sugar, corn syrup, water, cocoa and instant coffee.  Bring to a boil, whisking constantly.  When the mixture comes to a rolling boil, cook for 1 or 2 minutes.

Remove from the heat and whisk in the melted chocolate.  Stir in cognac.

There are so many goodies this can top and I thought immediately of ice cream.  I would like it on a brownie or blondie.  Swizzle it on a cheesecake.  Have fun.

    • I know you are one of the best cooks and bakers around so why don’t you send in some recipes with photos to be posted. Share when you are not busy….I can wait.
