Easy Noodles Romanoff

We all have those times where we yearn for comfort food and we want it NOW.  We don’t want to wait an hour making it.  We don’t want to order it from a take-out and have to pick it up.  We don’t even want to wait for someone else to make it for us.  That is me, tonight.

I had recently found this recipe for Noodles Romanoff and there was nothing to making it.  Pasta is a comfort food so it looks like, there is a match.

Noodles Romanoff

8 ounces egg noodles (medium or wide)

2 tablespoons Earth Balance

1 cup sour cream

1/4 cup Parmesan cheese

1/2 teaspoon kosher salt

pinch of black pepper

1 teaspoon garlic powder

1/4 cup Parmesan to sprinkle on the top

1.  Cook noodles according to package directions.  Drain.

2.  Stir Earth Balance into noodles and mix until Earth Balance  melts.

3.  In a medium bowl, mix sour cream, salt, pepper, garlic and 2/4 cup Parmesan cheese.

4.  Stir the sour cream mixture into the noodles and mix gently but thoroughly.

5.  Serve in individual  bowls.

6.  A salad with greens and tomatoes goes well with the noodles.

Sweet Melissa’s Hot Fudge Sauce

I am about to join Sweet Melissa Sundays.  While waiting, I have been trying a few of the recipes that the group has made already.

Today, I made this hot fudge sauce and I have to share the recipe.  It was delicious.  I put it on some mint chocolate chip ice cream which I did not make.  The question now is, “How do I eat dinner?”

 Hot Fudge Sauce

15 ounces best-quality bittersweet (64-68 percent) chocolate, coarsely chopped

1/2 cup sugar

1 cup plus 1 teaspoon light corn syrup

1 1/2 cups unsweetened Dutch-process powder

1 1/2 teaspoons instant coffee or instant espresso powder

2 tablespoons cognac or brandy

In the top of a double boiler over simmering, not boiling water, melt the chocolate, stirring occasionally.  Keep warm.

In a large non-reactive saucepan over medium heat, combine sugar, corn syrup, water, cocoa and instant coffee.  Bring to a boil, whisking constantly.  When the mixture comes to a rolling boil, cook for 1 or 2 minutes.

Remove from the heat and whisk in the melted chocolate.  Stir in cognac.

There are so many goodies this can top and I thought immediately of ice cream.  I would like it on a brownie or blondie.  Swizzle it on a cheesecake.  Have fun.
