Apple Kugel Muffins

After completing my last recipe,  the apple dessert/kugel, I had those four peeled apples.  One, I gave to hubby and the other three went into the muffins.  I like lots of apples when I bake.  Adjust to your own preferences.  Muffins are usually a quick and easy recipe and with my apples already peeled, this one took only a few moments to complete. 

Apple Kugel Muffins

 3 large eggs
1/2 cup oil
1 cup sugar                                                                                                                                    1 tsp cinnamon
1 tsp almond extract                                                                                                                    1 teaspoon vanilla extract 
1 cup  gluten-free flour (3 cups brown rice flour, 1 1/4 cups potato starch, 3/4 cup tapioca flour  – keep extra for another time)                                              1/2 tsp baking powder                                                                                                          1/2 teaspooon guar gum 
3  baking apples - peeled and cut into small pieces                                                 1/4 cup chopped almonds or walnuts – I used walnuts

Preheat oven 350. Grease 12 muffin tins or used liners, greased.

In large bowl, mix eggs, oil, sugar, cinnamon, almond extract, gluten-free flour, guar gum and baking powder until smooth. Do not overmix.

Place a small mound of apples into each muffin tin.  Keep some apples for the topping. Spoon batter into each tin to cover apples. Sprinkle with cinnamon and nuts and extra chopped apples.

Bake 20-30 minutes.
